Corn Dip with Rotel is a quick and slightly spicy appetizer perfect for tailgates and game day. This cold party dip is a favorite!

Ingredients

  • 15.25 ounce can sweet corn, drained
  • 10 ounce can Rotel, drained
  • ½ cup sour cream
  • ½ cup mayonnaise
  • 1 cup shredded cheddar cheese
  • 1 jalapeño, deseeded and diced
  • 2 green onions, diced - use the greens only
  • 1 teaspoon chipotle powder
  • 1 teaspoon garlic powder

To serve:

  • Fritos
  • Tortilla chips

Instructions

  1. In a large mixing bowl, combine the drained sweet corn and Rotel.
  2. Add sour cream and mayonnaise to the bowl, and mix until well combined.
  3. Stir in shredded cheddar cheese, diced jalapeño, and diced greens of the green onions.
  4. Add chipotle powder and garlic powder to the mixture, ensuring even distribution of the seasonings and stir. Adjust the amounts to taste if desired.
