I’ve been on a drink kick recently because it’s been so hot out that making food and even eating sounds so unappealing. These Coconut Mimosas have been the perfect trick to beat the heat and have something refreshing!
I’ll be honest and say that I’m not the biggest coconut water fan, but as soon as you combine it with champagne.. I’m all about it. Top it off with your favorite fruit and enjoy! I went with some blueberries and strawberries to celebrate the Fourth of July!

I love that it’s versatile enough that you can add in whatever fruit you picked up from the farmers market and I’m sure it’d still be great! If you want to leave the fruit in the drink a little while before to soak up the flavors it gives it even more of a fruity flavor.
Think a little bit of both a sangria and a mimosa combined! You can even add in a little bit of another juice to make it even more tropical. When I was recipe testing this… and let me tell you that was a hard job… I found some coconut water that was infused with pineapple! I was a huge fan of that just for how light and refreshing it was.
If you’re a fan of pineapple juice with your mimosas, whip up a batch of this Fresh Pineapple Ginger Juice!
The best part about it is that you can rehydrate with all of the coconut water that’s packed with electrolytes and potassium! It’s basically a perfect summer brunch meal all on it’s own ?
If you want more than one drink, I went with 2 parts coconut water and 3 parts champagne so you can scale it to however many you’d like to serve!

- 3 oz coconut water
- 4.5 oz champagne
- Fruit, to serve
Instructions
- Mix coconut water and champagne in a glass. Serve with your favorite fruit and enjoy!
