Fill a high sided pot with water and secure your immersion circulator to the side. Set the temperature to 131°F for medium-rare.

1

While your water comes up to temperature, season your filet mignons with salt and pepper on all sides. Place your filet mignons into a bag and vacuum seal how you’d like.

2

Make sure the bag is fully submerged into the water and cook for 1 hour for a 1 inch thick steak.

3

If you have a thicker steak, you’ll need to cook for longer to ensure an even cook throughout. For 2.5 inch thick cuts, aim for 4 hours.

4

Remove the steaks from the bag and set aside. If there’s extra liquid on the steaks, pat them dry to help ensure a good sear.
