Preheat oven to 425°F and prepare a sheet pan with aluminum foil.

In a small bowl, combine chili powder, cumin, oregano, paprika, salt, and pepper.

Add sliced bell peppers and sliced onion to the sheet pan. Drizzle 2 Tablespoons of the olive oil over the vegetables and sprinkle about half of the spice mixture.

Toss to combine. Bake for about 20 minutes, flipping halfway through, to ensure vegetables are close to fork tender.
