Sausage Kale White Bean Soup

In a large stock pot over medium heat, add in your sausage and begin to crumble until you get small pieces. Cook through until no longer pink, about 6-8 minutes.

Add in the diced onion and red pepper flakes and cook until the onions are translucent, another 2-3 minutes.

Pour in the chicken stock and water and stir. Be sure to scrape the bottom of the pan to loosen up any stuck pieces.

Add in the chopped kale and stir. Bring to a low boil and let cook until the kale becomes tender, another 5 minutes.

Pour in the drained cannellini beans and stir. Cook for an additional 2-3 minutes so they can warm through.
