Roasted Brussels Sprouts and Carrots

These Roasted Brussels Sprouts and Carrots are a perfect weeknight side dish. These oven roasted veggies will be your new favorite!

INGREDIENTS

– Brussels sprouts – Carrot chips – Olive oil – Salt

Preheat oven to 400°F. Cover a cookie sheet in aluminum foil. Place shaved brussels sprouts and carrots on pan.

Drizzle olive oil then sprinkle salt, paprika, pepper, onion powder, and garlic powder over the vegetables. Toss until thoroughly coated.

Bake for 15 minutes, then remove pan from oven and toss vegetables.

Bake for another 15 minutes, or until vegetables have reached desired crispness.

Enjoy warm or set aside until cool and refrigerate until ready to eat.
